Eat Garlic for Good Health

You may have heard about eating garlic for good health. Here’s why. Garlic is an excellent source of minerals and vitamins that are essential for optimum health.  Allicin, one of garlic’s most highly valued enzymes is found to have anti-bacterial, anti-viral and anti-fungal activities.  However, if you begin cooking with chopped or crushed garlic before allowing it to breathe for ten minutes you lose 60% of its value.  If you give your chopped/crushed garlic time to sit before changing its temperature (through cooking) you will give the Allicin in garlic an opportunity to work on behalf of your health.

Always purchase fresh garlic for maximum flavor and nutritional benefits by choosing plump garlic with unbroken skin.  Then gently squeeze the bulb between your fingers to check it feels firm and is not damp.

Garlic should be stored in an uncovered or loosely covered container in a cool dark place.  This maintains its freshness.  Whole garlic bulbs will keep fresh for about a month if stored properly.  Once you break the head of garlic, it reduces its shelf life to just a few days.

A Couple of Serving Ideas:

  • Purée roasted garlic, cooked potatoes and olive oil together to make delicious garlic mashed potatoes. Season to taste.
  • Healthy Sauté steamed spinach, garlic, and fresh lemon juice.
  • Add garlic to sauces and soups.
